Vegan “Scallops”

Happy Monday everyone! Today I have an amazing vegan “scallop” recipe for you. This has got to be a new favourite of mine. I can’t get over how good these are! They are also super easy to make.

I had these with a salad for my lunch today but you could create lots of wonderful dishes with these – risottos, pasta dishes, in a creamy white wine sauce….. Perfect for a simple dinner and also for something a bit more special.

  • 3-4 King Oyster Mushrooms cut into 1 inch rounds and soaked in hot water for an hour
  • 1 tbsp Vegetable Oil
  • 1 small Shallot finely chopped
  • 1 clove Garlic finely chopped
  • 2 tsp Tamari or soya sauce
  • 1/2 cup Vegetable Stock


  1. Heat the oil in a pan on a medium heat. Add the shallots and garlic. Fry for 1 minute.

  2. Add the mushroom "scallops" and sear on both sides for around 1-2 minutes.

  3. Add the vegetable stock and cook for 4-5 minutes so they absorb some of the stock.

  4. Serve on a bed of salad or use how ever you wish.

  2. When do you add the tamari or soy sauce?

  3. Don’t worry, I just saw your video so now I know when to add the soy sauce. Can’t wait to try it out.
